Maple Water vs Maple Syrup

Maple water is a maple sap which flows directly from a maple tree. It is not like maple syrup; however, they are derived from the same place.

By boiling maple sap, you get maple syrup. The sap contains a high proportion of water which is why it must undergo a process so that all the water evaporates, leaving behind a thick maple syrup. However, the density of sugar in maple water is about 2% whereas it is 66% in maple syrup.
